Chicken Fajitas


Fajitas are a Tex-Mex dish, traditionally consisting of grilled meat (usually beef, chicken, or shrimp), onions, and peppers, served on a flour or corn tortilla.


-1 lb. boneless, skinless chicken breast, trimmed
-1/2 teaspoon chili powder
-1/4 teaspoon cumin
-1/4 teaspoon smoked paprika
-1/4 teaspoon garlic powder
-1/4 teaspoon salt
-1/4 teaspoon black pepper
-1 tablespoon olive oil
-1 large onion, sliced
-1 red bell pepper, sliced
-1 green bell pepper, sliced
-8-10 small flour tortillas
-Optional toppings: sour cream, salsa, guacamole


1. Preheat grill to medium-high heat, about 375-400 degrees F.
2. To a small bowl, add chicken, chili powder, cumin, smoked paprika, garlic powder, salt, pepper, and olive oil. Mix until chicken is evenly coated with the spices.
3. Spray grill pan with cooking spray. Add chicken and cook for about 5 minutes per side, or until no longer pink in the center and juices run clear.
4. Remove chicken from grill and place on a cutting board. Slice into thin strips.
5. Add onions and peppers to the grill pan. Cook for 5-7 minutes, stirring occasionally, or until peppers are slightly charred.
6. Remove from grill and place in a large bowl.
7. Add chicken strips to the bowl and mix until everything is evenly mixed.
8. To assemble fajitas, place a heaping scoop of the chicken and peppers mixture onto the center of a tortilla. Add desired toppings and roll up the tortilla. Serve immediately.

-Add different vegetables to the grill pan, such as zucchini, mushrooms, or corn.
