These grilled baby potatoes are the perfect side to any summer BBQ. They’re roasted in herb butter, so they’re packed with flavor, and they’re nice and crispy on the outside.
Ingredients
- 1 kg baby potatoes
- 100 g butter
- 1 tbsp. chopped thyme
- 1 tbsp. chopped rosemary
- 1 tbsp. chopped sage
- Salt and pepper
Method
1. Preheat the grill to high heat.
2. In a small saucepan, melt the butter over low heat. Add the thyme, rosemary, sage, and a pinch of salt and pepper. Stir to combine.
3. Cut any large potatoes in half so they’re all roughly the same size. Toss the potatoes in the herb butter until they’re well coated.
4. Grill the potatoes for 10-15 minutes, until they’re tender and cooked through. Serve hot.
Potential changes & improvements
If you’re looking for a little more flavor, you could try adding some garlic to the herb butter. You could also roast the potatoes in the oven instead of grilling them, if you prefer. Just toss them in the herb butter and bake at 200C for 20-25 minutes.
