Honey Glazed Roasted Parsnips

Honey Glazed Roasted Parsnips

Parsnips are a great winter vegetable and they go really well roasted with a honey glaze. This dish is simple to make and can be served as a side dish or a main course.

Ingredients

1kg parsnips
3 tbsp honey
2 tbsp olive oil
1 tsp ground cumin
Salt and pepper

Method

1. Preheat the oven to 200C/400F/Gas 6.

2. Peel the parsnips and cut them into even-sized pieces.

3. In a bowl, mix together the honey, olive oil, cumin, salt and pepper.

4. Add the parsnips to the bowl and toss them in the honey glaze until they are evenly coated.

5. Spread the parsnips out on a baking tray and roast in the oven for 30-35 minutes, until they are golden brown and cooked through.

Potential changes & improvements

If you want to, you could add some chopped rosemary or thyme to the honey glaze. Alternatively, you could roast the parsnips with some other winter vegetables like carrots, sweet potatoes or squash.

What other food it works well with

Honey roasted parsnips go well with roast chicken or turkey, as well as with other roasted vegetables.

Common Mistakes

One common mistake is to not cut the parsnips into even-sized pieces. This can result in some pieces being overcooked and others being undercooked. Another mistake is to not toss the parsnips in the honey glaze before roasting, which can lead to them not being evenly coated.
