Lemon Roasted Artichokes
A delicious and healthy way to enjoy artichokes!
Ingredients
1 lemon, juiced
1 tablespoon olive oil
1 teaspoon salt
1/4 teaspoon black pepper
4 large artichokes
1/4 cup water
Method
1. Preheat oven to 190 degrees C.
2. In a small bowl, mix together lemon juice, olive oil, salt and pepper.
3. Cut off the artichokes’ stems, then cut each artichoke in half. Remove the fuzzy center from each half.
4. Place artichokes in a baking dish, then pour the lemon juice mixture over them. Add water to the dish.
5. Bake for 45 minutes, or until the artichokes are tender.
6. Enjoy!

Try roasting the artichokes with garlic for additional flavor.

Not removing the artichokes’ stems before halving them. Not removing the fuzzy center from each half.
