Ingredients

  • 1 kg sweet potatoes
  • 200 g gluten-free flour
  • 1 tsp salt
  • 1/4 tsp black pepper
  • 30 g butter
  • 1 bunch sage leaves

Method

  1. Preheat oven to 200C/400F.
  2. Prick sweet potatoes all over with a fork. Place on a baking sheet and bake for 45 minutes to 1 hour, until very soft.
  3. Remove from oven and let cool slightly. Scoop out the flesh into a large bowl.
  4. Mash the sweet potatoes until smooth. Add flour, salt and pepper, and mix until well combined.
  5. Dust a work surface with flour. Roll the dough out into a long rope, about 1 cm in diameter. Cut into 2 cm pieces.
  6. Bring a large pot of water to a boil. Add the gnocchi and cook for 2-3 minutes, until they float to the surface. Remove with a slotted spoon.
  7. In a large skillet, melt the butter over medium heat. Add the sage leaves and cook for 2-3 minutes, until the butter is browned and the sage leaves are crispy. Add the cooked gnocchi and toss to coat.
  8. Serve with additional sage leaves and black pepper, if desired.

Potential changes & improvements

There are a few ways you can change up this recipe to suit your taste. If you don’t have sweet potatoes, you can use regular potatoes instead. You can also use any type of flour you like, although gluten-free flour works best. If you want a bit more of a kick, you can add some red pepper flakes to the sauce. And if you’re not a fan of sage, you can use another herb like rosemary or thyme.

What other food it works well with

This dish goes well with a simple green salad and a glass of white wine. It also goes well with roasted vegetables like Brussels sprouts or roasted kale.

Common Mistakes

One common mistake people make when making this dish is not boiling the gnocchi long enough. They should be cooked for 2-3 minutes, until they float to the surface. Another mistake is not browning the butter long enough. The butter should be a deep golden brown and the sage leaves should be crispy.
