Vegan BBQ Tofu Skewers


Introduction

This recipe is for vegan BBQ tofu skewers. It is a quick and easy recipe that can be made in under 30 minutes. The skewers can be served as a main dish or as a side dish.

Ingredients

-1 block of extra firm tofu, drained and pressed
-1/4 cup of BBQ sauce
-1/4 cup of tamari or soy sauce
-1 tbsp of maple syrup
-1 tbsp of apple cider vinegar
-1 tsp of smoked paprika
-1/4 tsp of cumin
-1/4 tsp of garlic powder
-1/8 tsp of black pepper
-1 tbsp of olive oil
-1/2 red onion, cut into wedges
-1 red bell pepper, cut into squares
-1 yellow bell pepper, cut into squares
-1/4 cup of cilantro, finely chopped

Method

1. Preheat the grill or grill pan to medium high heat.

2. In a large bowl, whisk together the BBQ sauce, tamari or soy sauce, maple syrup, apple cider vinegar, smoked paprika, cumin, garlic powder, and black pepper.

3. Cut the tofu into 1-inch cubes and add it to the bowl. Toss to coat the tofu in the marinade.

4. In a separate bowl, mix together the olive oil, red onion, red bell pepper, yellow bell pepper, and cilantro.

5. Thread the tofu and vegetables onto skewers. If using wooden skewers, soak them in water for at least 30 minutes before using.

6. Grill the skewers for 10-12 minutes, turning once, or until the vegetables are slightly charred and the tofu is cooked through.

7. Serve with additional BBQ sauce, if desired.
