1 cup (120 g) of all-purpose flour

Method

1. Preheat the oven to 350°F (180°C).

2. In a small saucepan, combine the sugar and water. Cook over medium heat, stirring constantly, until the sugar has dissolved.

3. Remove from the heat and pour into a 9-inch (23 cm) round cake pan. Add the pineapple slices, arranging them in a single layer.

4. In the same saucepan, melt the butter over low heat. Add the brown sugar and vanilla extract, and stir until the brown sugar has dissolved.

5. Pour the brown sugar mixture over the pineapple slices.

6. In a medium bowl, whisk together the egg, milk, flour, baking powder, salt, and cinnamon.

7. Pour the batter over the pineapple slices.

8. Bake for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean.

9. Let the cake cool for 5 minutes. Invert onto a plate and garnish with cherries, if desired.
