Štrukli is a traditional Croatian dish, made of thin layers of dough filled with cottage cheese. It is typically served as a main course or as a side dish. Štrukli can be boiled or baked, and is often served with a dollop of sour cream on top.
Ingredients
- 500g cottage cheese
- 250g plain flour
- 1 egg
- 1 tsp salt
- 100ml water
- 100g butter
- Sour cream, to serve
Method
- In a large bowl, mix together the cottage cheese, flour, egg and salt until well combined.
- Gradually add the water, mixing until the dough comes together.
- On a floured surface, roll out the dough to a thin sheet.
- Cut the dough into rectangles or squares.
- Place a spoonful of cottage cheese filling in the centre of each piece of dough.
- Fold the dough over the filling to form a parcel, and press the edges to seal.
- In a large pot of boiling water, cook the štrukli for 5 minutes.
- Remove from the water and drain on paper towels.
- Melt the butter in a large frying pan over medium heat. Add the štrukli and cook until golden brown on both sides.
- Serve with a dollop of sour cream.
Potential changes & improvements
The dough for štrukli can be made in advance and refrigerated until ready to use. The filling can also be made ahead of time and refrigerated until needed.
If you don’t have cottage cheese, you can use ricotta or cream cheese instead.
The štrukli can be boiled or baked. To bake, preheat the oven to 200C/400F and place the štrukli on a baking sheet. Bake for 10-15 minutes, or until golden brown.

Štrukli goes well with roasted meats or vegetables, as well as a simple green salad.
Common Mistakes
One common mistake is not boiling the štrukli long enough. They should be cooked for at least 5 minutes, otherwise they will be doughy in the centre.
Another mistake is not frying the štrukli in butter after boiling. This step gives them a nice crispy exterior.
