Palmiers


Introduction

Palmiers are a French pastry made from puff pastry and sugar. They are often made in the shape of a crescent or a heart, and are sometimes called “elephant ears” or “butterfly cookies”.

Ingredients

1 sheet puff pastry

1/4 cup (50 grams) granulated sugar

1/2 teaspoon ground cinnamon (optional)

Method

1. Preheat oven to 200 degrees C (400 degrees F).

2. On a lightly floured surface, roll puff pastry into a rectangle about 30 x 20 cm (12 x 8 inches).

3. Sprinkle sugar and cinnamon over the puff pastry.

4. Roll up the pastry from one long side to the other, like a jelly roll.

5. Cut the roll into 1 cm (1/2 inch) thick slices.

6. Place the slices on a baking sheet lined with parchment paper.

7. Bake for 10-12 minutes, or until golden brown.

-Try using different spices, such as ground ginger or nutmeg.

-For a more decadent treat, brush the palmiers with melted chocolate before baking.

Common Mistakes
