This Chili-Lime Roasted Corn on the Cob is the perfect side dish for any summer BBQ or Mexican-themed dinner! It’s easy to make, and so delicious. The corn is roasted in the oven with a simple chili-lime seasoning, then served with a little bit of butter and some fresh cilantro. Yum!
Ingredients
- 6 ears of corn, husks and silks removed
- 3 tablespoons olive oil
- 2 tablespoons chili powder
- 1 tablespoon lime juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 3 tablespoons butter
- 1/4 cup chopped fresh cilantro
Method
1. Preheat oven to 375 degrees F (190 degrees C).
2. In a small bowl, combine olive oil, chili powder, lime juice, salt, and pepper. Rub this mixture all over the corn.
3. Place the corn on a baking sheet, and bake for 20 minutes. Remove from the oven, and brush with butter. Sprinkle with cilantro, and serve.
Potential changes & improvements
If you want, you could also grill the corn instead of roasting it. Just brush with the chili-lime mixture, and grill for 10 minutes or so, until it’s cooked to your liking. Another nice touch would be to sprinkle the corn with some crumbled cotija cheese before serving.
What other food it works well with
This corn would be great served alongside some grilled chicken or steak, or maybe some Mexican-style rice and beans. A cold beer would also be perfect!
Common Mistakes
One mistake people sometimes make with this recipe is not removing the husks and silks from the corn before cooking. Be sure to do this, or the corn will be tough and not very tasty. Also, be sure to not overcook the corn, or it will be dry and not very pleasant to eat.
