Vegan BBQ Pulled Jackfruit Sandwiches


This recipe is for a vegan version of the classic BBQ pulled pork sandwich, using jackfruit instead of pork. It is easy to make, and can be served with a variety of sides.

Ingredients

  • 1 can of jackfruit in brine or water
  • 1/2 teaspoon smoked paprika
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • 1 teaspoon sugar
  • 1 tablespoon apple cider vinegar
  • 1/4 cup BBQ sauce
  • 4-6 hamburger buns

Method

  1. Drain and rinse the jackfruit. Pat dry with a paper towel.
  2. In a bowl, mix together the paprika, garlic powder, onion powder, black pepper, sugar, and apple cider vinegar.
  3. Cut the jackfruit into small pieces, and add to the bowl. Toss to coat.
  4. Heat a pan over medium heat, and add the jackfruit. Cook for about 10 minutes, stirring occasionally, until the jackfruit is browned.
  5. Add the BBQ sauce and continue cooking for another 5 minutes.
  6. Serve on hamburger buns with coleslaw, pickles, and/or vegan cheese, if desired.

Potential changes & improvements

If you want a more traditional pulled pork flavor, you can add liquid smoke to the spice mix. For a spicier sandwich, you can add cayenne pepper or other chili powder to the spice mix. If you don’t have hamburger buns, you can use any type of bread or rolls. The jackfruit can also be served on a salad or in a wrap.
