Baked Zucchini Fries

These crispy baked zucchini fries are a healthier alternative to the usual deep-fried fare. They make a great side dish or snack, and go well with a dipping sauce such as ketchup or ranch dressing.

Ingredients

  • 1 kg zucchini, cut into fry-sized pieces
  • 1 cup (250 ml) milk
  • 1 cup (250 ml) seasoned bread crumbs
  • 1/2 teaspoon (2.5 ml) garlic powder
  • 1/4 teaspoon (1.25 ml) salt
  • 1/4 teaspoon (1.25 ml) black pepper
  • 1/4 cup (60 ml) olive oil

Method

  1. Preheat oven to 200 degrees C.
  2. Place zucchini pieces in a bowl and pour milk over them.
  3. In a separate bowl, mix together bread crumbs, garlic powder, salt and pepper.
  4. Dip each zucchini piece in the bread crumb mixture, then place on a baking sheet lined with parchment paper.
  5. Drizzle olive oil over zucchini fries.
  6. Bake for 20-25 minutes, or until golden brown.

Potential changes & improvements

For a bit of extra flavor, try adding some grated Parmesan cheese to the bread crumb mixture. You could also experiment with different herbs and spices in the breading.

What other food it works well with

These zucchini fries go well with burgers, sandwiches, or any other entree.

Common Mistakes

One common mistake is not draining the zucchini well enough after soaking in milk, which can result in soggy fries. Be sure to pat the zucchini dry before breading.
