Balsamic Glazed Brussels Sprouts

This dish is a delicious and healthy way to enjoy Brussels sprouts. The balsamic glaze gives the sprouts a lovely sweetness, whilst the roasting brings out their natural flavour. This dish is simple to make and can be enjoyed as a side dish or a main meal.

  • 1kg Brussels sprouts, trimmed and halved
  • 3 tablespoons olive oil
  • 2 tablespoons balsamic vinegar
  • Salt and pepper

Preheat the oven to 200°C/400°F/Gas 6. Place the Brussels sprouts in a roasting tin and drizzle over the olive oil and balsamic vinegar. Season with salt and pepper and toss everything together so that the sprouts are evenly coated. Roast in the oven for 25-30 minutes, stirring a few times during cooking, until tender and golden brown.

Potential changes & improvements

If you want a bit of extra crunch, you could try adding some chopped bacon or pancetta to the dish before roasting. For a vegetarian option, you could use a vegetable stock instead of the balsamic vinegar. For a bit of extra flavour, you could also try adding some garlic, herbs or spices to the dish.

What other food it works well with

This dish goes well with roast chicken, fish or pork. It would also be lovely served with some mashed potatoes and greens.

Common Mistakes

One common mistake is to overcook the Brussels sprouts. They should be tender but still have a bit of bite to them. Another mistake is to not season the dish enough – make sure to add enough salt and pepper.
