Balsamic Glazed Roasted Carrots


These balsamic glazed roasted carrots are the perfect side dish! They’re easy to make, and so full of flavour. Ingredients

  • 1kg carrots, peeled and cut into even-sized pieces
  • 3 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 2 cloves garlic, minced
  • Salt and pepper
  • 3 tablespoons balsamic vinegar
  • 1 tablespoon honey

Method

  1. Preheat the oven to 200°C/400°F/Gas 6.
  2. Put the carrots into a roasting tin, and drizzle over the olive oil.
  3. Sprinkle over the thyme, garlic, salt and pepper, and toss everything together so that the carrots are coated in the oil and seasonings.
  4. Roast in the oven for 25 minutes, until the carrots are tender.
  5. Meanwhile, put the balsamic vinegar and honey into a small saucepan, and heat gently until the honey has melted. Set aside.
  6. When the carrots are cooked, remove them from the oven and drizzle over the balsamic glaze. Toss everything together, and then serve.

Potential changes & improvements

If you want to, you could add some chopped fresh parsley or thyme to the carrots before serving. A sprinkle of toasted pine nuts would also be lovely. If you’re not a fan of balsamic vinegar, you could use apple cider vinegar or white wine vinegar instead.
