Cucumber Salad

This cucumber salad is a refreshing and easy side dish that goes with just about anything. It’s perfect for a summer BBQ or picnic. The best part is that it only takes a few minutes to make!

  • 1 cucumber, sliced
  • 1/2 red onion, sliced
  • 1/4 cup white vinegar
  • 1/4 cup water
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

1. In a large bowl, combine cucumber, red onion, vinegar, water, sugar, salt, and black pepper.

2. Refrigerate for at least 1 hour before serving.

Potential changes & improvements

Try adding some chopped fresh herbs to the salad for extra flavor. Basil, dill, and mint all work well. You could also add a bit of crumbled feta cheese.

What other food it works well with

This salad goes well with just about anything. Try serving it with grilled chicken or fish, roasted potatoes, or a simple green salad.

Common Mistakes

Be sure to slice the cucumber and red onion thinly, so they’re easy to eat. If you have time, you can seed the cucumber first. This will help to remove some of the bitterness.
