Lemon Bars


1 cup (250 ml) all-purpose flour
3/4 cup (180 ml) powdered sugar
1/4 cup (60 ml) cornstarch
1/4 teaspoon (1 ml) baking powder
1/8 teaspoon (0.5 ml) salt
1/2 cup (125 ml) butter, melted
2 eggs
1/2 cup (125 ml) fresh lemon juice
1 teaspoon (5 ml) grated lemon zest
1 cup (250 ml) granulated sugar
3 tablespoons (45 ml) all-purpose flour
1/4 cup (60 ml) fresh lemon juice


1. Preheat oven to 350 degrees F (180 degrees C).
2. In a medium bowl, combine 1 cup flour, powdered sugar, cornstarch, baking powder, and salt. Stir in melted butter. Press mixture evenly into the bottom of an ungreased 9×9 inch baking pan. Bake for 15 minutes.
3. In a small bowl, whisk together eggs, 1/2 cup lemon juice, and lemon zest. Pour over crust.
4. Bake for an additional 20 minutes.
5. Combine granulated sugar, 3 tablespoons flour, and 1/4 cup lemon juice. Drizzle over bars.
6. Cool bars completely before cutting into squares.
