A classic summertime flavor, these cupcakes are perfect for a picnic or potluck. Made with a light and fluffy orange cake base, and topped with a rich and creamy vanilla frosting. These cupcakes are sure to be a hit!
Ingredients
- 1 cup (250 mL) all-purpose flour
- 1 tsp (5 mL) baking powder
- 1/4 tsp (1 mL) salt
- 1/2 cup (125 mL) unsalted butter, at room temperature
- 1 cup (250 mL) sugar
- 2 eggs
- 1 tsp (5 mL) vanilla extract
- 1/4 cup (60 mL) orange juice
- 1 Tbsp (15 mL) grated orange zest
- 1 cup (250 mL) whipping cream
- 1/4 cup (60 mL) icing sugar
- 1 tsp (5 mL) vanilla extract
- Orange food coloring, optional
Method
- Preheat oven to 350°F (180°C). Line 12 muffin cups with paper liners.
- In a small bowl, whisk together flour, baking powder and salt. Set aside.
- In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs, one at a time, then stir in vanilla.
- Alternately add flour mixture and orange juice to the butter mixture, beginning and ending with the flour. Stir in orange zest.
- Divide batter evenly among prepared muffin cups. Bake for 16-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
- To make the frosting, beat whipping cream, icing sugar and vanilla together until thick and creamy. Add a few drops of orange food coloring, if desired.
- Spread or pipe frosting onto cooled cupcakes. Serve immediately.
Potential changes & improvements
For a lighter cupcake, you could substitute the all-purpose flour for cake flour. To make a chocolate version, simply add 1/4 cup (60 mL) of cocoa powder to the flour mixture.
