Orange Creamsicle Cupcakes


A classic summertime flavor, these cupcakes are perfect for a picnic or potluck. Made with a light and fluffy orange cake base, and topped with a rich and creamy vanilla frosting. These cupcakes are sure to be a hit!

Ingredients

  • 1 cup (250 mL) all-purpose flour
  • 1 tsp (5 mL) baking powder
  • 1/4 tsp (1 mL) salt
  • 1/2 cup (125 mL) unsalted butter, at room temperature
  • 1 cup (250 mL) sugar
  • 2 eggs
  • 1 tsp (5 mL) vanilla extract
  • 1/4 cup (60 mL) orange juice
  • 1 Tbsp (15 mL) grated orange zest
  • 1 cup (250 mL) whipping cream
  • 1/4 cup (60 mL) icing sugar
  • 1 tsp (5 mL) vanilla extract
  • Orange food coloring, optional

Method

  1. Preheat oven to 350°F (180°C). Line 12 muffin cups with paper liners.
  2. In a small bowl, whisk together flour, baking powder and salt. Set aside.
  3. In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs, one at a time, then stir in vanilla.
  4. Alternately add flour mixture and orange juice to the butter mixture, beginning and ending with the flour. Stir in orange zest.
  5. Divide batter evenly among prepared muffin cups. Bake for 16-18 minutes, or until a toothpick inserted into the center of a cupcake comes out clean.
  6. To make the frosting, beat whipping cream, icing sugar and vanilla together until thick and creamy. Add a few drops of orange food coloring, if desired.
  7. Spread or pipe frosting onto cooled cupcakes. Serve immediately.

Potential changes & improvements

For a lighter cupcake, you could substitute the all-purpose flour for cake flour. To make a chocolate version, simply add 1/4 cup (60 mL) of cocoa powder to the flour mixture.
