Tarte à l’Alsacienne is a traditional tart from the Alsace region of France. It is made with a shortcrust pastry base, and a filling of cream, eggs, sugar, and almond flour. The tart is then baked until the filling is set and the pastry is golden brown.
Ingredients:
-1 shortcrust pastry dough
-1/2 cup (100ml) heavy cream
-2 eggs
-1/4 cup (50g) sugar
-1/4 cup (30g) almond flour
Method:
1. Preheat the oven to 350F (180C).
2. Roll out the pastry dough on a floured surface, and use it to line a 9-inch (23cm) tart pan. Trim the excess pastry from the edges.
3. In a bowl, whisk together the cream, eggs, sugar, and almond flour. Pour the mixture into the pastry-lined tart pan.
4. Bake the tart for 30-35 minutes, or until the filling is set and the pastry is golden brown.

-You could use a different type of flour in the filling, such as hazelnut or chestnut flour.
-You could add a teaspoon of vanilla extract to the filling.
