This fabulous vegan Moroccan chickpea stew is easy to make, packed with flavor, and hearty enough to satisfy the heartiest of appetites!
Ingredients
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon ground ginger
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon ground black pepper
- 1/2 teaspoon salt
- 2 cans (15 ounces each) chickpeas, drained and rinsed
- 3 cups vegetable broth
- 1 can (14.5 ounces) diced tomatoes, undrained
- 1/2 cup raisins
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh cilantro
- 1/4 cup chopped fresh mint
- 1/2 cup toasted slivered almonds, for garnish
- 1/2 cup toasted chopped pistachios, for garnish
- 1/2 cup chopped dried apricots, for garnish
- 1/4 cup chopped pitted dates, for garnish
- 1/2 cup vegan sour cream, for garnish (optional)
Method
- In a large pot or Dutch oven, heat the oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
- Stir in the cumin, ginger, cinnamon, pepper, and salt and cook for 1 minute.
- Stir in the chickpeas, broth, tomatoes, raisins, parsley, cilantro, and mint. Bring to a simmer and cook for 10 minutes.
- To serve, ladle the stew into bowls and garnish with the almonds, pistachios, apricots, dates, and vegan sour cream, if desired.
