Vegan Moroccan Chickpea Stew


This fabulous vegan Moroccan chickpea stew is easy to make, packed with flavor, and hearty enough to satisfy the heartiest of appetites!

Ingredients

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon salt
  • 2 cans (15 ounces each) chickpeas, drained and rinsed
  • 3 cups vegetable broth
  • 1 can (14.5 ounces) diced tomatoes, undrained
  • 1/2 cup raisins
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup chopped fresh mint
  • 1/2 cup toasted slivered almonds, for garnish
  • 1/2 cup toasted chopped pistachios, for garnish
  • 1/2 cup chopped dried apricots, for garnish
  • 1/4 cup chopped pitted dates, for garnish
  • 1/2 cup vegan sour cream, for garnish (optional)

Method

  1. In a large pot or Dutch oven, heat the oil over medium heat. Add the onion and garlic and cook until softened, about 5 minutes.
  2. Stir in the cumin, ginger, cinnamon, pepper, and salt and cook for 1 minute.
  3. Stir in the chickpeas, broth, tomatoes, raisins, parsley, cilantro, and mint. Bring to a simmer and cook for 10 minutes.
  4. To serve, ladle the stew into bowls and garnish with the almonds, pistachios, apricots, dates, and vegan sour cream, if desired.
