Fruit Tart
Ingredients:
1 puff pastry sheet
1 egg
1 tablespoon sugar
1 tablespoon cornstarch
1/2 teaspoon ground cinnamon
4 tablespoons apricot jam
1 1/2 cups mixed fresh berries
1 tablespoon butter
Method:
1. Preheat oven to 375 degrees F (190 degrees C).
2. On a lightly floured surface, roll pastry to a 1/8-in.-thick (3-mm-) sheet. Trim even with edge of pan.
3. Line pan with pastry. Trim pastry even with edge of pan. Prick pastry several times with fork. Bake for 8 minutes. Cool on a wire rack.
4. In a small bowl, whisk together egg, sugar, cornstarch and cinnamon.
5. Spread apricot jam over crust. Spoon berry mixture over jam. Dot with butter.
6. Bake for 20 minutes. Cool on a wire rack.
Potential changes & improvements:
-Try using a different type of jam, such as raspberry or strawberry.
-Add a layer of custard or cream cheese beneath the jam for extra richness.
-Try using a mixture of different kinds of berries.

-Serve with a dollop of whipped cream or ice cream.
Common Mistakes:
-Overcooking the pastry. Be sure to prick the pastry well and only bake it until it is just starting to turn golden brown.
-Not using enough fruit. Be generous with the fruit filling to make sure each slice is packed with flavor.
