Pain d’Épices (Spice Bread)

  • 250ml (1 cup) honey

  • 1 teaspoon ground cloves
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon

Method

  1. Preheat the oven to 150C (300F).
  2. Bring the water and honey to a boil in a large saucepan.
  3. Remove from the heat and stir in the flour, baking soda, baking powder, salt, ginger, cloves, nutmeg, and cinnamon.
  4. Pour the batter into a greased and floured loaf pan.
  5. Bake for 1 1/2 hours, or until a toothpick inserted into the center comes out clean.
  6. Allow the bread to cool in the pan for 10 minutes before removing to a wire rack to cool completely.
