Tarte aux Fraises (Strawberry Tart)

  • 1 puff pastry sheet
  • 1 egg, beaten
  • 1/4 cup sugar
  • 1 tablespoon cornstarch

  1. Preheat oven to 375 degrees F (190 degrees C).
  2. On a lightly floured surface, roll pastry to a 1/8-in.-thick (3-mm-) sheet. Trim even with edge of pan.
  3. Line pan with pastry. Trim pastry even with edge of pan. Prick pastry several times with fork.
  4. Bake for 8 minutes. Cool on a wire rack.
  5. In a small bowl, whisk together egg, sugar, cornstarch and vanilla. Spoon over crust.
  6. Arrange strawberries over filling. Bake for 20 minutes. Cool on a wire rack.

If you’re looking for a bit of extra sweetness, try adding a tablespoon or two of honey to the filling mixture. You could also substitute raspberries or blackberries for the strawberries. For a richer tart, brush the pastry with melted butter before baking.
