Roasted Tomato and Mozzarella Salad

This is a simple and tasty salad that makes a great side dish or light meal. It is packed with flavour and is sure to be a hit with everyone.


  • 1 kg of cherry tomatoes
  • 250g of mozzarella cheese, cubed
  • 1/4 cup of olive oil
  • 1 tablespoon of balsamic vinegar
  • 1 teaspoon of sugar
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of black pepper
  • 1/4 cup of chopped fresh basil


  1. Preheat oven to 200C.
  2. In a large bowl, combine the cherry tomatoes, mozzarella cheese, olive oil, balsamic vinegar, sugar, salt, and black pepper.
  3. Pour the mixture onto a baking sheet and roast for 15-20 minutes, or until the tomatoes are blistered and the cheese is melted.
  4. Remove from oven and stir in the chopped basil.
  5. Serve immediately.
