This delicious vegan portobello mushroom burger is the perfect summertime meal. Packed with flavour, it’s sure to satisfy even the most carnivorous of appetites!
Ingredients
- 4 portobello mushrooms
- 1/2 cup bread crumbs
- 1/4 cup vegan Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon sea salt
- Fresh cracked black pepper
- 1/4 cup olive oil
- 4 burger buns
- 1 avocado, sliced
- 1 tomato, sliced
- 1/4 cup vegan mayo
- 1/2 teaspoon garlic powder
Method
- Preheat grill to medium high heat, about 375 degrees F.
- In a bowl, combine bread crumbs, vegan Parmesan cheese, garlic powder, onion powder, salt, and pepper.
- Brush olive oil on both sides of each mushroom cap.
- Place mushroom caps on the grill, gill side up. Grill for about 10 minutes, until tender.
- Remove from grill and let cool slightly.
- Meanwhile, in a small bowl, combine vegan mayo, garlic powder, and a pinch of salt and pepper.
- Spread on the inside of each burger bun.
- Assemble burgers with grilled mushrooms, avocado slices, tomato slices, and vegan mayo.
