Vegan Portobello Mushroom Burger


This delicious vegan portobello mushroom burger is the perfect summertime meal. Packed with flavour, it’s sure to satisfy even the most carnivorous of appetites!

Ingredients

  • 4 portobello mushrooms
  • 1/2 cup bread crumbs
  • 1/4 cup vegan Parmesan cheese
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon sea salt
  • Fresh cracked black pepper
  • 1/4 cup olive oil
  • 4 burger buns
  • 1 avocado, sliced
  • 1 tomato, sliced
  • 1/4 cup vegan mayo
  • 1/2 teaspoon garlic powder

Method

  1. Preheat grill to medium high heat, about 375 degrees F.
  2. In a bowl, combine bread crumbs, vegan Parmesan cheese, garlic powder, onion powder, salt, and pepper.
  3. Brush olive oil on both sides of each mushroom cap.
  4. Place mushroom caps on the grill, gill side up. Grill for about 10 minutes, until tender.
  5. Remove from grill and let cool slightly.
  6. Meanwhile, in a small bowl, combine vegan mayo, garlic powder, and a pinch of salt and pepper.
  7. Spread on the inside of each burger bun.
  8. Assemble burgers with grilled mushrooms, avocado slices, tomato slices, and vegan mayo.
