Vegan Butternut Squash Soup


This vegan butternut squash soup is the perfect winter warmer. It’s packed full of flavour and is super easy to make. Plus, it’s packed full of nutrients and is a great way to get your daily dose of vegetables.

Ingredients

  • 1 butternut squash, peeled, deseeded and cubed
  • 1 carrot, peeled and diced
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 teaspoon of ginger, grated
  • 1 teaspoon of cumin
  • 1 teaspoon of turmeric
  • 1 teaspoon of ground coriander
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of ground black pepper
  • 1 litre of vegetable stock
  • 1 can of coconut milk
  • Sea salt and black pepper, to taste

Method

  1. In a large soup pot, sauté the onions, garlic and ginger in a little oil over a medium heat until they’re softened.
  2. Add in the spices and cook for a minute until fragrant.
  3. Add in the butternut squash and carrot and cook for a few minutes until they’re slightly softened.
  4. Pour in the vegetable stock and bring to a boil. Reduce the heat and simmer for 15 minutes.
  5. Add in the coconut milk and season to taste with salt and pepper. Simmer for a further 5 minutes.
  6. Using a blender, blend the soup until it’s smooth. Serve hot with some crusty bread.

Potential changes & improvements

If you’re not a fan of coconut milk, you could use almond milk or soy milk instead. You could also add in some other vegetables, such as sweet potato or kale. If you want a bit of a kick, you could add in a pinch of cayenne pepper.
